GREEN VEGGIE SOUP

INGREDIENTS

  • 1 TBSP olive oil

  • 2 medium leeks, chopped

  • 4 cloves garlic, minced

  • 1 zucchini, chopped

  • 1 bunch parsley

  • 2 stalks celery

  • 1 broccoli head, chopped

  • 2 L veg stock or broth

  • 400g cannellini bean can, drained

  • 250g spinach

PROCEDURE

  • Heat oil in pot, add leeks, garlic, broccoli & celery. Cook for 10 mins to soften

  • Increase heat and add beans, pour over stock and cook for 5 minutes

  • Add spinach and parsley & cook for further 5 mins

  • Blitz until smooth
