PUMPKIN SOUP

INGREDIENTS

  • 1 Jap pumpkin

  • 2 Onions

  • 2 cups water, or stock

  • sprinkle nutmeg

  • olive oil

PROCEDURE

  1. Heat large pot on stovetop.

  2. Roughly chop onion & add to pot with a drizzle of olive oil. Cook on low to medium heat.

  3. Roughly chop pumpkin into cubes and add to pot.

  4. Add water to pot and cook on low with lid on for approx. 20 minutes (until pumpkin is soft).

  5. Transfer soup to food processor and blend until smooth.

  6. Transfer back to pot and stir through nutmeg to taste.
