CAULIFLOWER SOUP

INGREDIENTS

  • 1 large cauliflower

  • 1 can coconut milk

  • 1 Onion

  • 2 tbsp olive oil

  • 1 tsp cumin (optional)

PROCEDURE

  • Preheat your oven to 220 degrees celcius.

  • Chop the cauliflower into florets and chop the onion in half (leaving skin on).

  • On a baking tray spread the cauliflower and onion, drizzle with oil & cumin, mixing well.

  • Bake for 30-35 minutes.

  • Transfer Cauliflower and onion to a blender/food processor (Don't forget to remove the onion skin)!

  • Poor in coconut milk and blend (you may need to do this in batches).

  • Transfer to a large pot on stovetop and add salt and pepper to taste.
