ZUCCHINI & EGG MUFFINS

INGREDIENTS

  • 5 eggs

  • 2 spring onions (finely chopped)

  • 1/2 zucchini (grated)

  • 1 red capsicum (diced)

  • 50 mls milk (I use coconut)

  • 1/2 tsp thyme

  • salt & pepper

  • olive oil

PROCEDURE

  1. Preheat oven to 180 degrees celsius

  2. Mix onions, zucchini & capsicum together in a bowl

  3. Mix eggs, milk, thyme and salt and pepper in a bowl.

  4. Oil muffin tray with olive oil. Divide the vegetable mix into 9 parts of the muffin tray & bake in the oven for 3 minutes.

  5. Remove muffin tray from oven and add egg mixture (approx. 3 quarters full)

  6. Bake in oven for approx. 10 minutes or until egg is set
