VEGETABLE STIR-FRY

INGREDIENTS

  • Sauce:
    3 garlic cloves (minced)
    3 tbsp rice vinegar
    3 tbsp coconut aminos or tamari

    1 tbsp honey (optional)
    1 tbsp toasted sesame oil
    1 tbsp grated ginger

  • Stir fry:
    2 large head broccoli
    1 head broccolini
    1 red onion
    1 red capsicum
    2 portobello mushrooms

    3 garlic cloves (minced)

    2 tsp grated ginger

PROCEDURE

  1. For the sauce, mix all ingredients together and set aside.

  2. Chop veggies into bite size pieces

  3. In a wok or large fry pan heat a drizzle of olive oil on the stovetop. Add broccoli, broccolini, onion, capsicum & mushrooms and cook while stirring for approx. 6 minutes

  4. Add garlic & ginger and cook for another minute. Turn off the heat and add the sauce. Serve on its own, with some brown rice or quinoa and Enjoy!
