CHICKEN & BROCCOLI STIR-FRY

INGREDIENTS

  • 1 head broccoli, chopped

  • 4 spring onions (green & white

    separated)

  • 4 cloves garlic, minced

  • 1 inch fresh ginger, peeled & minced

    To prepare chicken:

  • 2 TBSP olive oil

  • 1 Chicken breast sliced into bite sized pieces

  • 2 TSP arrowroot (tapioca)

  • 1/2 TSP garlic powder

  • 1/2 TSP onion powder

  • 1 TBSP coconut aminos

    Sauce:

  • 6 TBSP coconut aminos

  • 1 TSP sesame oil

  • 5 TBSP broth or stock

  • 2 TSP arrowroot

PROCEDURE

  1. Toss chicken with arrowroot, garlic & onion powder, & coconut aminos

  2. Heat wok or fry-pan, add olive oil & chicken. Stir until cooked through and remove into a bowl

  3. Saute spring onion (whites), garlic and ginger & broccoli

  4. Add chicken & sauce.

  5. Stir well, adding spring onion greens
