SLOW COOKED OSSO BUCCO

INGREDIENTS

  • 3 osso bucco

  • 1/4 pumpkin

  • 1 x sweet potato

  • 3 carrots

  • 2 onion

  • 3 garlic cloves

  • 2 x tin tomatoes (no added nasties), or stock/broth

  • 1 cm piece turmeric (or ground)

PROCEDURE

  1. Roughly chop pumpkin, sweet potato, carrots, onion, garlic. Peel and grate turmeic (if using fresh).

  2. Place meat in slow cooker and veg on top (can also use a large pot on stovetop).

  3. Add tomatoes (or stock/broth). Ensure meat is under liquid - if needed add some water.

  4. Cook on low all day. If using slow cooker you can leave the house for the day & come home to a cooked dinner!
