QUINOA SALAD

INGREDIENTS

  • 1/2 cup cooked quinoa (see my ‘Perfect Quinoa’ recipe for how to cook your quinoa)

  • 1/2 cup baby spinach (chopped)

  • 1/2 cup chopped cherry tomatoes (halved)

  • 1/3 cup red onion (diced)

  • 1 ripe avocado (sliced)

  • 1/3 cup fetta

  • 2 tbls lemon juice

  • 2 tbls olive oil

  • 1/2 tsp salt

PROCEDURE

  • Place quinoa, spinach, tomatoes, onion, avocado & fetta in bowl and mix

  • In a small bowl whisk together lemon, olive oil & salt

  • Pour dressing over salad when you are ready to serve.
